Course Description
Learning Area Leader: Miss K. Hoare.
Students will gain a sound base knowledge of food safety, knife skills and cookery techniques to create dishes suitable for cafe sales. Students will work with local charities and community groups to provide food for those in need, gaining an understanding of sustainability, kaitiakitanga and manaakitanga.
Skills/content you will cover in this course
Learn how to plate dishes like a chef
Gain knowledge around vegetables, desserts and baking as well as various culinary products and terms
Develop advanced food safety knowledge in hazard identification and work safely in a commercial kitchen context.
Skills you need to be successful in this course - be open to giving things a try, ability to work independently and good time management.
This course is useful for or will lead to - tertiary study in cookery, food and beverage service, hospitality, travel and tourism.
**Please note that learners cannot take 3HOSP and 3KAI**
Recommended Prior Learning
Having taken 2KAI or 2HOSP is advantageous, but not essential
